Grilled Salmon

Serves 4


1/4 cup fresh lime juice
1 tablespoon Vergezocht HO oil
2 teaspoons Dijon mustard
1 teaspoon fresh ginger; grated
1 clove garlic; crushed
1/4 teaspoon cayenne pepper
1/8 teaspoon black pepper
4 salmon steaks; 2.5cm thick


  1. Combine marinade ingredients in a small bowl.
  2. Place fish in a flat glass pan or pie plate or into a large zip bag, pour marinade over top. Turn to coat.
  3. Marinate for 45-60 minutes, turning several times.
  4. Heat grill to medium.
  5. Brush grill or broiler pan with Vergezocht HO oil.
  6. Grill fish until cooked through and opaque in centre.
  7. Turn after about 4-5 minutes.
  8. Total grilling time will depend on heat of the grill and thickness of fish.
  9. Serve with vegetables of your choice.
