Vinaigrette
A simple oil & vinegar salad dressing, which is also called a basic vinaigrette or basic French dressing, can be mixed up in a flash. It uses the standard 3:1 vinaigrette ratio, meaning 3 parts oil to 1 part vinegar. Add other ingredients as you like.

Makes 1 cup of dressing

Ingredients :
¼ cup white wine vinegar
¾ cup Vergezocht HO oil
Dijon mustard
finely chopped thyme, marjoram, basil, chives and/or tarragon
Sea salt and ground white pepper (or freshly ground black pepper), to taste
Preparation
1. Combine the mustard and vinegar in a glass or stainless steel bowl and whisk them together briefly.
2. Place the mustard-vinegar mixture along with the oil, herbs and seasonings in a blender and mix for about 10 seconds or until fully combined.
3. Transfer to a glass bowl and let stand for 30 minutes to let the flavours meld.
4. Give the dressing a good whisk immediately before serving.
